I heard back from the beef place. $4.12 a lb for organic (but not certified), grass fed beef. That isn't much more than what we are paying for beef now. By law, they can only sell 1/2 or whole cows, so we need to decide if we are going to do it. Buying 1/2 a cow would require buying a bigger freezer.
A friend found a CSA that offers fall shares, so we are definitely going to try to get a share.
Dinner the last few nights Friday I went to a friends to watch the movie. They had tacos, so I grilled sirloin and had it on top of spring mix, with fat free cheese, salsa and fat free sour cream on top. Saturday, I roasted chicken thighs. Last night the boys went to a football party so I made spaghetti squash and topped it with leftover spaghetti sauce that was in the freezer. Alex took nachos made with baked tortilla chips, chicken breasts seasoned with taco seasoning and salsa, and cheese. Tonight was leftover night. Vegetable soup from last week, spaghetti squash, rice pasta, roasted chicken, the spaghetti sauce I thawed last night, taco seasoned shredded chicken breast was all pulled out of the refrigerator and everyone picked what they wanted.
I have never understood people who don't use leftovers. They save both time and money. I got dinner on the table in less than 15 minutes, my family ate healthy food and by saving the food from ending up in the trash, I basically fed my family for free.

love leftovers--husband won't eat many leftovers (bash him up side the head!)-I usually freeze them and either pull them out and eat on them myself or send them to my sister....yes agree-leftovers ROCK!
